The Perfect Fillet Steak
To cook thick steaks such as a fillet to a well-done preference, it is best to seal them first in a hot pan and then place the steak in a pre-heated oven at 200°C for 10-15 minutes (dependent on thickness). This will ensure the fillet steak is cooked through but not burnt on the outside.
Once your steak is cooked as you would like it, it should be allowed to rest for between 2-5 minutes covered in foil before it is carved or served. The intense heat of a pan makes the meat tighten so by allowing the meat to relax we achieve a more tender result and ultimately better eating quality. The meat will continue to cook in its own heat whilst resting so allow for this when judging how pink you like your meat.
