How to Cook the Perfect Roast Beef

Rare roast beef (Small)

 

Pre-heat the oven to gas mark 8, 450°F or 230°C. Rub the fat with dry mustard and flour and season well with salt and pepper.

Roast at this temperature for 20 minutes, then reduce the temperature to gas mark 5, 375°F or 190°C and continue to roast, basting at least three times, for 15 minutes per lb (450gm) for rare, plus 15 minutes more medium and another 30 minutes for well done.

Rest for 20-30 minutes before carving
