How to Cook Perfect Roast Pork
Pre-heat the oven to gas mark 8, 450°F or 230°C.
Dry the Pork Joint skin well and rub in sea salt and roast for 25 minutes.
Then bring the temperature down to gas mark 5, 375°F or 190°C and allow 35 minutes per lb (450gm). Do not baste or the crackling will not be crisp. Rest for 20-30 minutes then carve.
